It is good to see so many more people are learning the nutritional value of eating the "whole" egg. The egg is not as misunderstood as it use to be.
Here are some facts I learned from my nutritionist years ago, as well as researching "egg" articles" (1) The yolk contains "lecithin," which is crucial to our well-being. Lecithin helps our liver function. It keeps the arterial lining free from cholesterol and prevents kidney and gallstones from forming. (2) "Lecithin emulsifies fat, breaking it down to smaller fat droplets. This action speeds up and improves the digestion of fats by enzymes because the surface area is increased. (3) Did you know that the egg yolk is one of the few foods that naturally contain vitamin D? Yup, it's true. (4) "The "high" quality eggs are rich in vitamins A and D, as well as choline for mental acuity in adults. (5) A whole egg contains all 9 essential amino acids. (6) Eggs are great for the eyes due to carotenoid content. (7) Eggs actually help in preventing blood clots and heart attacks. (8) Eggs help regulate our nervous system, cardiovascular system and the brain (choline).

Eggs in their entirety have an exuberant amount of nutritional value. So many folks opt for just the egg white (yuck!) because of the protein value it provides. Please see photo description for more nutritional value. Years ago I brought my cholesterol from over 200 down to low 170's. How did I do this? Adding more eggs to my weekly diet was a huge factor. Please note I was under the care of a professional nutritionist.
